Oh, yay! I think I have all of those books except one. A few more I can think of are:
Ms. Ely’s Christmas Wish: A New Life Tabernacle Short Story by LaShonda Bowman: part of a series, but I read it as a standalone and loved it. I also think it’s really novella length, not exactly a short story. 🙂
A Baby for Christmas by Pat Simmons: Book Two in a series. I haven’t read this one, but I did read Book One and enjoyed it.
I also haven’t yet read the four novellas originally published in a collection called A Merry Navidad: 4 Latino Christian Novellas. The collection is no longer available, but I know at least two of the novellas are:

Have Yourself A Merry Little Cocoa by Cynthia Marcano
Liwen Y. Ho writes both Christian and mainstream sweet romance. Three of her holiday romances are:
